This is a healthy chicken recipe! I googled to see what I could find and the recipes I landed on, all called for the chicken to be fried and drenched with oil. I figure a good alternative is just to pan sear a chicken, quickly coat it with breadcrumbs and wrap it with the delicious goodness of brie cheese, fresh spinach and asparagus...then bake it. It was one of my more successful chicken recipes because the meat was moist.
- asparagus - 10 stems
- spinach - 1 cup
- garlic - 3 cloves
- onion - 1/2 chopped
- rosemary - 1/3 teaspoon
- red paprika - 1/2 teaspoon
- breadcrumbs - 1/4 cup
- brie cheese - 6 table spoons
- salt and pepper - to taste
- olive oil - 1 tablespoon
In a plate, pour the breadcrumbs and mix in with the rosemary and paprika
Take two slices of chicken breast and pound it down with a meat pounder until it's about 1/4 inch thick. Evenly coat with salt and pepper on both sides. Pan sear the chicken on each side for about 1 minute, then coat each side with the breadcrumb mix.
In a pan sautee the onion and garlic for about 2 minutes on medium heat, then add salt and pepper to taste in addition to some chilli flakes. Throw in your Asparagus and sautee for about a minute (this is just to infuse the Asparagus with a little bit of flavour), lay out 5 stems of Asparagus in the middle of each chicken breast, top it with fresh spinach and 3 table spoons of brie cheese. Roll the chicken breast around the Asparagus, Spinach and Brie and secure it with a toothpick. Pan sear both rolled pieces in a pan until the crust is a golden brown on medium heat.
Place the chicken on a greased baking tray and bake at 375 degrees for 20 minutes.
Serve with potatoes or rice on the side.
